Nichiei Sake, Nakamura Shuzou

Alongside the great Mount Hakusan in Ishikawa, Japan is Chef Kevin Cory's family's sake brewery, Nakamura Brewery established since the 1800's.  The heart of our Nichiei Sake is the first grade sake rice, Yamada Nishiki and Gohyakumangoku.  Our Yamada Nishiki rice is lovingly brewed by sake masters in the rural Noto, Ishikawa peninsula during the very cold winters to bring out a rich taste and smooth texture.

JONA Certification, Organic

In Japan, organic JAS is an organic standard of agricultural products (raw materials), organic certification in alcoholic beverages requires the certification of a domestic organic certification organization separately. Nakamura Brewery's AKIRA sake has been certified by JONA (Japan Organic & Natural foods Association) in 2001 and is being reviewed and renewed annually.

In addition, in 2007 certified by European ICEA (later changed to EU certification), USDA certification in 2010, Canada COR certification in 2014, and has been certified organic in various parts of the world.

Japan Sake Awards 2018 - The Gold Prize is awarded to Nakamura Brewery Co., Ltd for Nichiei - May 30, 2018 - Nami Gotoh, National Research Institute of Brewing - Shigeyuki Shinohara, Japan Sake and Shochu Makers Association

 

Very high quality hinoki trees were used to build Nakamura Brewery which has been designated as a cultural asset of Kanazawa, Japan.

We are proud to announce that all of the sakes served at NAOE® are made by Nakamura Brewery. *

 

* - Due to limited supply since covid, we have introduced other local Ishikawa and Hokuriku region sake breweries onto our menu that also match well with our style of Japanese cuisine, including Naohiko Noguchi Sake Institute, whose Limited bottles, logo, and tasting room; Touan 杜庵 were designed by Chef Kevin Cory's friend, Toshio Ohi (Chozaemon XI).
