NAOE Miami 3 our of 3 stars. SUSHI. Simply put NAOE is Japanese for OMG omakase. Okayk, not really, but chef Kevin Cory sure makes you think so with his exquisitely prepared, hyper fresh sushi and Japanese fare. This may be the closest Miami gets to Tokyo. Take the motto: It's not fresh, it's alive. Open only Wednesday through Sunday, NAOE serves the chef choice menu ($26) every night. All menus are prepared daily and if you have a special request, you need to make it at least a week in advance. Among the items you may find on your plate or in your bento box: smooth egg custard with soft freshwater eel bits; fresh giant clam sashimi in a tangy shiso vinaigrette; in-shell conch dressed in simple soy sauce; sweet, chilled corn-miso soup; salmon belly; saltwater and freshwater eel; uni so creamy it's been known to silence even the pickiest of reviewers; and horse mackerel with vinegary soy sauce. It's as authentic as it gets here. Be careful about what you ask for, though, as extrasw can add up quickly; they charge for fresh grated wasabi. That's fresh stuff, not the tubed stuff, but still.
